Day 40, Level 1: Mandatory mask-wearing, tagine, eggplant and sarcasm

We remain in Level 1. A little community cluster scare caused a bit of consternation last Friday but it hasn't caused a change in alert levels. 

Today it was announced that mask-wearing is now mandatory on public transport in Auckland and on all domestic flights. Good job. It should always have been this way. There is a lax attitude in general and it's not helpful. 

Another lovely day, although it rained late in the afternoon. 

A huge day of work for me today, barely left my computer. I have many deadlines at the moment, mostly in the writing/editing realm. It's full-on and exhausting. I've now been in Auckland for almost 4 weeks straight - I've just got too much on to get back to the beach at the moment. Hopefully later this week ...

I came up for air around 6pm and enjoyed cooking a pork chop tagine. I love my tagine, it's the best cooking vessel ever, and I use it often. It's brilliant for, not only tagine style dishes, but also curries and stews and - well anything that requires a bit of liquid. Because of the lid shape, moisture doesn't evaporate. One dish dining. Easy clean. Perfect. And it reminds me of Morocco!


I roasted a whole eggplant, peeled it, scooped out the flesh and mashed it. I have to admit it looks more like a pile of maggots or cat vomit than food fit for human consumption! 

Into the pork chop tagine it went - and added a beautiful taste sensation as well as making the sauce thick and glossy. Lyn, do you still not like eggplant!?!?

Not the most appealing-looking food in the world - but oh so tasty!
